Gluten Free - Coriander and Lemon Chicken Kebabs Recipe

This recipe makes 4 servings. Takes about 30 minutes to make.

Ingredients:

  • 10 cherry tomatoes or 2 tomatoes
  • 2 zucchini cut into thick slices
  • 2 capsicum, cut into small pieces
  • 100g button mushrooms
  • 4 skinned large boneless chicken breasts, cut into cubes
  • ½ Lemon, juiced
  • 1 tablespoon Olive Oil
  • 2 tablespoons of chopped fresh coriander

Directions:

  • preheat grill
  • boil large pan of water
  • add in capsicum, mushroom and zucchini
  • blanch for 2 minutes
  • drain well
  • thread chicken cubes and vegetables alternately onto 4 skewers
  • mix lemon juice with oil
  • preheat grill
  • cook kebabs for 12-15 minutes, basting with lemon juice mixture occasionally
  • sprinkle over the coriander and drizzle with olive oil before serving.
